A favorite recipe for hosting your Super Bowl fans


Penelope's Beer Cheese


1 lb. extra-sharp cheddar cheese  

 1 lb. mild cheddar cheese 

 1 tsp. cayenne pepper  

 1 tsp. paprika  

 1/2 tsp dry mustard  

 1 tsp. kosher salt  

 3 garlic cloves, minced  

 8-12 oz your favorite dark beer  

 Dash of Cholula hot sauce too taste (or your favorite hot sauce)


Shred the cheddar cheese into a bowl and set aside. Place the garlic, cayenne pepper, paprika, mustard in a food processor. Blend together into a paste. Add the cheese to the bowl and pulse until combined. Add salt to taste. With the food processor running, slowly pur the beer through the chute until the cheese reaches your desired consistency. Be careful not to overmix the blend or the cheese may separate. Will keep in the refrigerator in a sealed container for up to two weeks. Serve with crackers, pita chips, or pretzels!
